  • Baking and Cooking Instructions
1 pack Koopmans Apple Pie extra dough
    220 g butter or margarine
    1 egg (M)
1.4 kg mildly tart apples (approx. 8 pieces, e.g. Elstar or Jonagold)
    100 g raisins
    30 grams of sugar
    3 teaspoons of cinnamon
Flower for pollinating the kitchen counter.
    (everything at room temperature)

    baking time: 65-75 minutes

    Preparation
Soak the 100 g raisins in lukewarm water (about 15 minutes) and pat them dry.
Peel the apples and remove the cores. Cut the apples into small cubes and put them in a bowl.
Mix the apple cubes with the 30 g sugar, 3 teaspoons cinnamon, and the soaked raisins.
Place the rack slightly below the middle of the oven and preheat the oven.
Grease the springform pan with butter or use a baking spray (e.g. Dr. Oetker).
Soften the 220 g butter in a mixing bowl and beat the egg in a small bowl. Add 2/3 of the egg to the mixing bowl along with the apple pie mix.
Knead the mixture with a mixer with dough hooks or by hand until a cohesive dough is formed.
Line the bottom and sides of the springform pan with 2/3 of the dough. If the dough is too sticky, you can put it in the refrigerator for a short time.
Fill the mold with the apple mixture and press it down.
Dust the countertop with some flour. Roll the remaining dough into thin strips, flatten them slightly, and place them criss-cross over the apple mixture.
Brush the strips and the edge of the cake with the remaining beaten egg.
Bake the apple pie for 65–75 minutes until cooked through and golden brown.
Let the cake cool for about 1 hour before removing it from the springform pan.
